How Pork Roll Began
John Taylor created his secret recipe for pork roll in 1856. This was the start of a popular New Jersey food.
Building the Company
In 1888, John Taylor and his son William officially started the Taylor Provision Company. The company quickly became very important to the city of Trenton. By 1894, they were earning a lot of money, showing how popular their product was.
The Name Change
John Taylor first sold his product as "Taylor's Prepared Ham." However, things changed after a new law was passed in 1906. This law was called the Pure Food and Drug Act. It set new rules for what could be called "ham." Taylor's product did not meet these new rules. So, the company had to change its name from "Taylor's Prepared Ham" to "pork roll."
After this, other companies started making similar products. They used names like "Rolled Pork" or "Trenton style Pork Roll" to compete with Taylor's product.
Taylor's Shops
During the 1950s, the company had many shops along the Jersey Shore. They had eight sandwich shops in total, including three in Atlantic City and two in Cape May. The last of these shops, located in Cape May, closed in the early 1980s when its owner retired. Today, the company still operates in Trenton, New Jersey.
