Teewurst (pronounced TAY-voorsht) is a special German sausage. It is made from raw pork and bacon. Sometimes, a little beef is also used. The meat is finely chopped and mixed with spices. Then, it is put into special covers called casings.
After being put into casings, Teewurst is smoked over beech wood. This gives it a unique smoky flavor. The sausage then needs to sit for about seven to ten days. This resting time helps it get its full, delicious taste. Teewurst is known for being very soft and easy to spread, like a paste.
What is Teewurst?
Teewurst is a type of raw sausage. This means the meat inside is not cooked before it's made into a sausage. Instead, it is cured and smoked. The special way it's made gives it a creamy texture. It's often enjoyed on bread or crackers.
History of Teewurst
Teewurst was first created in a region called Pomerania. This was in the middle of the 1800s. People believe it was invented in a small town called Rügenwalde. This town is now in Poland, but it used to be part of Germany.
The name Teewurst means "tea sausage" in German. It got this name because people often ate it during teatime. They would serve it on sandwiches as a snack.
The Rügenwalder Teewurst Name
For a long time, the town of Rügenwalde was famous for its sausage makers. Teewurst was their most well-known product. In 1927, the name Rügenwalder Teewurst became a protected name. This means only sausages made in a certain way and from that area could use the name.
After World War II, many sausage makers from Rügenwalde moved to West Germany. They started new companies there. They continued to make Teewurst. In 1957, they created an association. This group registered the Rügenwalder Teewurst name as a trademark. This helped protect its special origin.
Today, only companies that originally came from Rügenwalde can use the full name Rügenwalder Teewurst. Other companies can still make similar sausages. They just have to call them "Teewurst" or "Rügenwalde-style Teewurst." This helps people know the difference.
