Trappey's Louisiana Hot Sauce (Original Recipe)

Trappey's Hot Sauce is a well-known American brand of hot sauce. It was first made by a company called Trappey's Fine Foods, Inc. in New Iberia, Louisiana. Today, a company named B&G Foods owns the brand, having bought it in 1997.

Trappey's makes many different products. These include hot sauces like Red Devil Cayenne Pepper Sauce and Bull Louisiana Hot Sauce. They also make pickled jalapeños and various okra products. Okra is a green vegetable often used in Southern cooking.

Even though it's called "Louisiana-style," Trappey's Hot Sauce is no longer made in Louisiana. It is now imported from Colombia. Trappey's Louisiana Hot Sauce is known for being milder than some other hot sauces from Louisiana. Its heat level is measured on the Scoville scale, usually between 1,200 and 1,600 units.

How Trappey's Hot Sauce Started

The company began in 1898 thanks to a man named B.F. Trappey. He was an entrepreneur from Louisiana. Before starting his own business, he worked for the company that makes Tabasco sauce.

B.F. Trappey started growing tabasco chili peppers. He used seeds from Avery Island, Louisiana, where Tabasco sauce is made.

The Early Days of the Company

B.F. Trappey named his company B.F. Trappey and Sons. He had ten sons and one daughter who helped him. They started making their own hot sauce. At first, they called their sauce "Tabasco."

This caused a long-running disagreement with the McIlhenny family. The McIlhenny family makes the famous Tabasco brand sauce. In 1906, the McIlhenny Company received a trademark for their Tabasco brand. This meant only they could use that name for their sauce.

After this, Trappey's changed the name of their sauce. They started calling it "Louisiana Hot Sauce." This name was less specific but still showed where the sauce came from.

Changes in Ownership

Over the years, Trappey's Hot Sauce changed owners several times. In 1982, Perry and Wiltz Segura bought the company. Later, in 1991, the McIlhenny Company (the Tabasco makers) actually owned Trappey's for a short time. Finally, in 1997, B&G Foods bought the brand, and they own it today.

What's in Trappey's Hot Sauce?

The ingredients in Trappey's Hot Sauce are listed on its label. The main ingredients include distilled vinegar, red pepper, and salt.

It also contains some other ingredients that help with its texture and color. These include guar gum and xanthan gum. Xanthan gum is used to make the sauce smooth and consistent. Ascorbic acid is also added, which is a form of Vitamin C. Finally, it contains red#40, which is a food coloring.
