What is an Affineur?
An affineur is a special cheese expert. They do not make the cheese. Instead, they carefully age and care for cheeses. They make sure the cheeses develop their best flavors and textures. This process is very important for high-quality cheeses.
The New Brand and Awards
In 2011, the von Mühlenen family created a new brand. They called it Affineur Walo of Mühlenen. This new company is located in Granges Paccot, near Fribourg.
Walo von Mühlenen continued his family's tradition of excellence. At the 2015 World Cheese Awards, his new brand won many honors. He received twelve medals for his different cheeses. Two of his cheeses, the spicy semi-hard Stärnächäs and Armailii de la Gruyère, won "Super Gold" awards. This shows his skill in aging cheese.
