Zabar's is a famous food store located in New York City. It's on the Upper West Side of Manhattan, at 2245 Broadway and 80th Street. Louis Zabar and Lillian Zabar started this special market. Zabar's is well-known for its amazing selection of bagels, smoked fish, olives, and cheeses. Even though many people think of it as a Jewish deli, Zabar's does not sell kosher food.

History of Zabar's

Zabar's has a long and interesting history, starting with its founders.

How Zabar's Began

Louis Zabar, whose birth name was Mordko Leib Zabarka, was born in 1901. He came to the United States from Ukraine in the early 1920s. He first lived in Brooklyn, where he rented a small space in a farmer's market.

Louis married Lillian Teitlebaum in 1927. Lillian was born in 1905 and also came to America from Ukraine. She settled in Philadelphia before moving to New York City, where she met Louis. They had three sons: Saul, Stanley, and Eli.

Louis Zabar passed away in 1950. By that time, he owned ten different markets! After Louis's death, Lillian married Louis Chartoff.

Family Leadership and Growth

From 1960 to 1994, Louis and Lillian's sons, Stanley and Saul Zabar, took over the business. They partnered with Murray Klein, who joined the store in 1953. Murray Klein was not part of the Zabar family, but he was a very important leader for the store. He retired in 1994.

In the late 1960s, Zabar's was the first store in the USA to sell drip coffee makers like the Wigomat. This showed how Zabar's was always looking for new and exciting products.

Today, Saul Zabar is the president and a co-owner of Zabar's. Stanley Zabar is the vice president and also a co-owner. Both brothers were students when their father passed away. Stanley Zabar and his wife, Judith Zabar, also helped create the Zabar Art Library at Hunter College in 2008.

In the 1970s, Zabar's moved and expanded. This made it one of the biggest supermarkets in Manhattan.

Special Products and Family Businesses

In 2011, Zabar's changed the name of a popular seafood spread. It was originally called "Lobster Salad" but was renamed "Zabster Zalad." This new name helped customers understand that the spread was made mostly of salted crawfish and mayonnaise.

Eli Zabar, one of Louis and Lillian's sons, has his own group of specialty food shops. As of 2023, he has ten stores, including Eli's Market and E.A.T.

In 2022, a book called Zabar's: A Family Story With Recipes was published. It tells the history of Zabar's and shares some of its famous recipes. The author, Lori Zabar, was the oldest grandchild of Louis and Lillian Zabar.
