Zagorski štrukli (say: ZAH-gor-skee SH-troo-klee) is a very popular traditional dish from Croatia. It's especially loved in the northern parts of the country. You'll find it in the Hrvatsko Zagorje and Zagreb regions. This tasty dish is made from dough with different kinds of filling. You can enjoy it either boiled or baked. It's quite similar to a dish called štruklji from Slovenia, a country nearby.

How to Make Štrukli

Making štrukli is a fun process. The first steps are the same whether you boil or bake them.

Preparing the Dough

First, a thin sheet of pastry dough is rolled out. It needs to be very flat and thin, almost covering a whole table! Next, a special filling is spread over the dough. This filling is usually made from cottage cheese, mixed with eggs, sour cream, and a little salt.

Rolling and Cutting

After the filling is spread, the dough is carefully rolled up. It's rolled lengthwise from both sides, meeting in the middle to form two joined rolls. Finally, these rolls are cut into smaller pieces. Each piece is usually about 10 to 20 centimeters long.

Cooking Štrukli

There are two main ways to cook štrukli:

  • Baked Štrukli: The cut pieces are placed into a baking tray. They are then covered generously with a creamy sauce, often made from clotted cream. They bake for about 45 minutes. They are ready when they turn a nice golden-brown color on top.
  • Boiled Štrukli: These pieces are put into a pot of boiling water. Separately, some onion and parsley are fried until they are lightly browned. This mix is then added to the pot with the štrukli. The štrukli cook in the boiling water for about 20 minutes.

Cultural Importance

Zagorski štrukli is more than just a meal; it's an important part of Croatian culture. In 2007, the Croatian Ministry of Culture added Zagorski štrukli to a special list. This list is for Croatia's intangible cultural heritage. This means it's a traditional practice, skill, or custom that is important to the country's identity. It's something passed down through generations.
