Ayam rica-rica (pronounced "ah-yam ree-kah ree-kah") is a super tasty and spicy chicken dish from Indonesia. It means "chicken with rica-rica sauce." This dish comes from a place called North Sulawesi, where the Minahasan people live. They are famous for their bold and spicy cooking!
What's in It?
The special spicy sauce for Ayam rica-rica is called rica-rica bumbu. This sauce is made with lots of chopped or ground chili peppers. They use both red and green chilies, and sometimes even super hot bird's eye chilies!
Other ingredients in the sauce include shallots (which are like small onions), garlic, and ginger. A little bit of salt and sugar is also added to balance the flavors. Cleaned chicken meat is then cooked in this amazing rica-rica sauce until it's ready to eat.
How It's Served
Ayam rica-rica is usually served hot. It often comes with fluffy steamed rice. People also like to add crispy fried shallots on top for extra crunch and flavor. Fresh slices of cucumber are often served on the side to help cool down your mouth from the spice!
