When you barbecue, you cook food very slowly over low heat. This is different from regular grilling, which uses high heat. Cooking slowly helps make tough meats super tender and easy to eat. Some barbecue dishes can cook for 8 to 24 hours!
Barbecue in the United States
In the United States, people barbecue different kinds of meat. This often depends on where they live. For example, in Texas, beef barbecue is very popular. In Kansas City, pork barbecue is a favorite. Chicken is also a common choice for barbecuing across the country.
American barbecue often uses a special sauce. This is called barbecue sauce. It is a thick, dark red sauce. It usually has spices, tomatoes, and honey. Many American barbecue grills use hickory wood for heat. This wood gives the meat a smoky flavor.
In California, people sometimes cooked beef in a hole in the ground. This old method is called a "pit barbecue." It's another way to slow-cook meat.
