What are Calypso Beans Like?
Calypso beans are a type of kidney bean hybrid. This means they are a mix of two different bean types.
How the Plant Grows
These beans grow on a bush-like plant. The plant can reach about 15 inches (38 cm) tall. Each pod usually holds 4 to 5 beans. It takes about 70 to 90 days for the beans to be ready for harvest from the time you plant the seed. The beans themselves are small, about 3/8 inch (1 cm) long, but they are plump.
Cool Seed Colors
Calypso beans are famous for their unique colors. They have a striking black and white pattern. Each bean is half black and half white. You might even see one or two black dots in the white part! There is also a red and white version of this bean.
How Are Calypso Beans Used?
When the pods are young, you can pick them and eat them like green beans. But when the beans are fully grown, they are usually dried. People then use these dried beans in many different recipes.
Cooking Tips: Dry vs. Cooked
Calypso beans get bigger when you cook them. They also become very smooth. If you start with 1 cup of dried Calypso beans, you will get about 2 cups of cooked beans.
