Carlo Cracco's Journey to Becoming a Chef
Early Training and First Steps
Carlo Cracco started his cooking journey at the Pellegrino Artusi institute in Recoaro Terme. After finishing school, he worked at a restaurant called "Da Remo" in Vicenza. In 1986, he began working with another famous chef, Gualtiero Marchesi, in Milan.
Later, Carlo worked at "La Meridiana," a resort in Savona. He then spent three years in France. There, he learned a lot about French culinary arts, which means the art of cooking.
Returning to Italy and Earning Stars
After his time in France, Carlo Cracco came back to Italy. He became the chef at the Enoteca Pinchiorri restaurant in Florence. This restaurant was awarded two Michelin stars, which are very special awards for excellent food.
Soon after, Gualtiero Marchesi invited Carlo to work with him again. This time, they opened a new restaurant called "L'Albereta" in the Lombardy region. Carlo was the chef there for three years. He then opened his own restaurant, "Le Clivie," in the Piedmont region. It quickly earned one Michelin star.

This is their highest rating for amazing food. In 2007, another newspaper, la Repubblica, named it one of the 50 best restaurants in the world.
In February 2014, Carlo Cracco opened another place in Milan. It's a bistro called "Carlo e Camilla in segheria." This name means 'Carlo and Camilla in the sawmill.' It got its name because it's located in an old, unused sawmill.
