Dal makhani is a super popular and tasty dish that comes from New Delhi, India. It's a newer version of traditional lentil stews. This creamy dish is made with special black beans called urad dal and other pulses. It gets its rich flavor from butter and cream. The word makhan in Hindi actually means butter!
How Dal Makhani Was Invented
Dal makhani was created by two clever chefs, Kundan Lal Jaggi and Kundan Lal Gujral. They were both from a region called Punjab in India. They had already invented another famous Indian dish called butter chicken.
A New Vegetarian Idea
These chefs ran a restaurant named Moti Mahal in Daryaganj, Delhi. They wanted to make a new vegetarian dish that would be as popular as their butter chicken. One day, a regular customer suggested they try something exciting with urad dal. This type of lentil was already used in many traditional Indian dishes.
The Birth of a Classic
Taking this idea, Kundan Lal Jaggi and Kundan Lal Gujral experimented. They combined urad dal with butter and cream, creating the rich and creamy dish we now know as dal makhani. It quickly became a favorite, just like their butter chicken!
