Dhindo (Nepali: ढिँडो [ɖʱĩɽo]) is a special meal from Nepal. It's made by slowly adding flour to boiling water while stirring it well. This simple dish is a main food for many people in Nepal. You can also find it in parts of India, like Sikkim and Darjeeling.

For a long time, some people thought Dhindo wasn't as good as rice. It was sometimes linked to lower social status. But now, Dhindo is becoming very popular in cities. Many restaurants serve it. This change shows that people are starting to appreciate Nepal's local crops more. They realize these foods are very healthy and nutritious.

How to Make Dhindo

Making Dhindo is a simple process. You need about three parts water for every one part flour.

Ingredients and Steps

  • First, boil the water in a cooking pot.
  • You can add some ghee (a type of clarified butter), garlic, salt, or sugar to the water. Or, you can serve the ghee on the side later.
  • Next, slowly add the flour to the boiling water.
  • As you add the flour, stir the mixture very strongly. Keep stirring until it becomes thick and stiff.
  • This stirring process is called maskaaune (मस्काउने) in Nepali.

What Flour to Use

Traditionally, Dhindo is made from ground buckwheat or millet. Sometimes, corn meal is also used. You can actually use almost any flour to make Dhindo. It's basically just hot water mixed with ground grain.

Special Tools for Dhindo

  • The best pot for making Dhindo is a phalame tapke. This is a special iron pan.
  • To stir the thick Dhindo, people use a narrow iron spatula. This tool is called a dabilo (दाबिलो).

How to Eat Dhindo

Dhindo is eaten in a unique way. You don't chew it!

Eating Dhindo with Sides

  • First, you make a small ball of Dhindo using your fingers.
  • Then, you dip this ball into a liquid.
  • Common liquids include lentil soup, meat soup, milk, or a sour vegetable dish called gundruk.
  • After dipping, you swallow the Dhindo ball without chewing it.
  • Dhindo is also often served with chutney, which is a flavorful sauce.
