Dingle Distillery is a special place in Dingle, Ireland, where they make Irish whiskey, vodka, and gin. It opened in 2012 in a converted sawmill. Dingle is in a Gaeltacht area, which means people there speak Irish. The first whiskeys made here were ready in 2016.
In 2017, Dingle Distillery made history. It became the first independent Irish distillery to release a special type of whiskey called single pot still whiskey in many decades. The distillery plans to make even more spirits to meet the growing demand.

Irish Whiskey's Comeback
For a long time, the Irish whiskey industry faced tough times. Many distilleries closed down in the 1900s. By the 1980s, only two distilleries were left in Ireland!
But things have changed a lot since 2010. The Irish whiskey industry is now growing fast. Many new distilleries have opened. When Dingle Distillery started, it was one of the first new ones. It joined famous places like New Midleton Distillery and Old Bushmills Distillery. Now, Ireland has many working distilleries, and more are planned!
How Dingle Distillery Started
The idea for Dingle Distillery came from Oliver Hughes. He also started the Porterhouse Brewery, a well-known brewing company. The distillery is in an old sawmill building. It was changed into a whiskey-making place in 2012. It officially opened on November 29th.
Starting the distillery created 25 jobs for people in the area. More jobs were expected when a visitors' center opened. The special copper pot stills used at the distillery were designed by John McDougall.
What Dingle Distillery Makes
The distillery uses large pot stills to make two casks of whiskey every day. The cool climate in Dingle is good for making whiskey. To be called whiskey in Ireland, a spirit must be aged for at least three years. That's why Dingle Distillery's first whiskey was ready in late 2016.
Besides whiskey, they also have a special still for making gin and vodka. In 2017, they sold about 100,000 bottles of Dingle gin.
Types of Whiskey
The first batch of whiskey came out in late 2016. It included two types of triple-distilled whiskeys. Both were aged in bourbon casks:
- Dingle Single Malt Whiskey (46.5% alcohol)
- Dingle Single Malt Whiskey Cask Strength (60.7% alcohol)
The second batch was released in 2017. It had four different kinds of whiskey:
- Dingle Pot Still Whiskey (46.5% alcohol) - Aged in Pedro Ximenez casks.
- Dingle Single Malt Whiskey (46.5% alcohol) - Aged in Pedro Ximenez, Oloroso sherry, and bourbon casks.
- Dingle Single Malt Whiskey Cask Strength (60.2% alcohol) - Aged in bourbon, Oloroso, and Pedro Ximinez casks.
- Dingle Single Malt Whiskey Cask Strength (46.5% alcohol) - Aged in a mix of port and bourbon casks.
