Dingle Distillery is a place in Ireland where they make special drinks like Irish whiskey, vodka, and gin. It started in 2012 and is owned by a company called Porterhouse Brewing Company. It's located in a town called Dingle in County Kerry. The first whiskeys made here were ready to drink in late 2016. The distillery calls itself an 'artisan' place, meaning they make things with great care and skill. In 2017, Dingle Distillery was the first independent Irish distillery in many years to release a special type of whiskey called single pot still whiskey.

History of Dingle Distillery

The idea to start a distillery in Dingle came from Oliver Hughes. He also helped start the Porterhouse brewing and restaurant group. The place where the distillery is now used to be a sawmill. It was changed into a whiskey-making factory in 2012. It officially opened on November 29, 2012. This new business created at least 25 jobs for people in the area. Special copper machines called pot stills were designed for the distillery by John McDougall.

To get money to start, Dingle Distillery offered special casks of whiskey to early investors. These investors were called "Founding Fathers." Their whiskey was ready for bottling from November 2017. In 2018, the distillery announced plans to make even more of their spirits.

What Dingle Distillery Makes

The distillery uses large machines called pot stills to make two casks of whiskey every day. The cool weather in Dingle is good for making whiskey. In Ireland, a spirit must be stored for at least three years to be called whiskey. This is why Dingle Distillery only started selling whiskey in late 2016.

The distillery also has a separate machine for making gin and vodka. By 2017, Dingle Distillery was selling 100,000 bottles of Dingle gin each year.

Whiskey Products

The first whiskey from Dingle Distillery was released in late 2016. It included two types of whiskey that were distilled three times. Both were aged in special barrels called bourbon casks.

  • Dingle Single Malt Whiskey, 46.5% alcohol (7,500 bottles made)
  • Dingle Single Malt Whiskey Cask Strength, 60.7% alcohol (500 bottles made)

The second group of whiskeys came out in 2017. It included three different single malts and one single pot still whiskey. The company also made special limited edition whiskeys. These were named after parts of the "Celtic cycle of the year."
