Dubliner is a special kind of cheese from Ireland. It's made from cow's milk that has been pasteurized, which means it's heated to kill any germs. This cheese is aged for a long time, usually over a year. It gets its name from the city of Dublin, even though it's actually made in County Cork, which is another part of Ireland.

Dubliner cheese has a unique taste. It tries to mix the sharp, strong flavor of cheddar with the sweet, buttery taste of Parmesan. Sometimes, you might see small white pieces in Dubliner cheese. How Dubliner Cheese Was Created

The idea for Dubliner cheese started in 1990. An Irish person named John Lucey wanted to create a new kind of cheese. He aimed to make a cheese that was different from regular Cheddar cheese. His goal was to produce it using most of the same equipment that makes cheddar. This new cheese would then be sold across Europe.

From Idea to Supermarket Shelves

Just one year later, a company called Carbery Milk Products agreed to help make John Lucey's cheese. They started making it for sale in 1994. It became very popular! By 1999, Dubliner cheese was introduced in the United States. By 2011, more than 40,000 tonnes (that's 40 million kilograms!) of Dubliner cheese had been made. It is now sold in many different countries around the world. Since 1996, a company called Ornua (which used to be called the Irish Dairy Board) has been selling Dubliner cheese internationally under the well-known Kerrygold brand.
