Eduardo Sousa runs a family farm and a restaurant called La Pateria de Sousa. This farm has been making food since 1812, which is over 200 years! It's amazing that his family has kept this tradition going for so long.

How Geese Make Natural Foie Gras

On Eduardo Sousa's farm, the geese live a very natural life. They get to roam freely and eat lots of different foods that grow right there. They munch on tasty figs, crunchy acorns, and various wild plants. One special plant they eat is the yellow bush lupine. The seeds from this plant give the foie gras a lovely yellow color. This is usually seen in foie gras made by force-feeding geese with corn. But on Sousa's farm, it happens naturally!

Famous Recognition

Eduardo Sousa's unique way of farming has caught the attention of many people around the world. A famous chef named Dan Barber visited his farm and wrote about it in his book, The Third Plate. Chef Barber also talked about Sousa's farm at a TED presentation in 2008. His story was even shared on the radio show This American Life in 2011.

In 2006, La Pateria de Sousa received a special honor called the Coup de Coeur award. This award was given at a big food show in Paris, France, called the Salon International d'Alimentation (SIAL). It showed that experts recognized and loved his natural foie gras.
