Flatkaka (which means "flat cake") or flatbrauð ("flat bread") is a special kind of flatbread from Iceland. It's made from rye flour and doesn't use yeast, so it's called "unleavened" bread. This means it doesn't rise like regular bread. Flatkaka is usually soft, round, thin, and dark. It often has a cool pattern on it from how it's cooked!

How Flatkaka is Made

Long ago, people in Iceland made flatkaka by baking it on hot stones or right on the glowing embers of a fire. Later, they used small, heavy cast iron frying pans. Today, if you make flatkaka at home, you might even use an electric hot plate to get it just right.

There's often a difference between flatkaka made at home and the kind you buy in stores. Homemade flatkaka is usually softer and more traditional. Store-bought versions can be a bit thicker and dryer because they sometimes add wheat flour.

A Taste of History

People believe that Icelanders have been baking flatbreads like flatkaka since the first settlers arrived in Iceland around the 9th century. Imagine eating this same bread that Vikings might have enjoyed!

In the past, there wasn't always enough grain in Iceland. So, people sometimes added something called Iceland moss (a type of lichen) to their flatkaka. This helped make the bread more filling.

How to Enjoy Flatkaka

Flatkaka is super versatile! It's usually cut into halves or quarters before serving. You can put many different toppings on it. Some popular choices include butter or a special mutton pâté (a spread made from lamb meat).

It's also delicious with hangikjöt (smoked lamb), smoked salmon, or even pickled herring. It's a tasty and important part of Icelandic meals.
