Forks Over Knives is a movie from 2011 that talks about how eating certain foods can help you stay healthy. It suggests that a diet based on whole plants, without animal products or highly processed foods, can prevent or even reverse many common illnesses. The film encourages people to eat foods like whole grains, beans, vegetables, and fruits, and to avoid things like refined sugar, white flour, and oils.
What the Film is About
The movie Forks Over Knives follows the work of two important people: Dr. Caldwell Esselstyn, a surgeon, and Dr. T. Colin Campbell, a professor who studies nutrition. They both believe that many health problems, such as obesity (being very overweight), cardiovascular diseases (heart and blood vessel problems), and even cancer, can be avoided or treated by eating a diet made of whole, plant-based foods. This means staying away from processed foods and foods that come from animals.
The China Study
The film also looks at a big study called the "China–Cornell–Oxford Project," which lasted for 20 years. This study led to Professor Campbell's book, The China Study. In his book, he suggests that common health issues like coronary artery disease (a type of heart disease), diabetes, obesity, and cancer might be linked to the typical Western diet. This diet often includes lots of processed foods and animal-based foods, like dairy products.
