Empal gepuk is a delicious Indonesian dish. It's a sweet and spicy fried beef. People sometimes just call it empal or gepuk. This tasty food is very popular on Java island. But it actually comes from the Sundanese people in West Java, Indonesia.
How Empal Gepuk is Made
Making empal gepuk starts with beef. Usually, a part called beef shank is used. First, the beef is boiled until it's cooked through. Then, it's cut into thick pieces, about half the size of your palm.
Next, these beef pieces are gently pounded. This is done with a stone pestle and mortar. Pounding helps to make the meat softer. It also helps the meat spread out a little bit.
What Spices are Used?
Many yummy spices give empal gepuk its special flavor. These spices are ground up. They include shallot, garlic, chili pepper, coriander, palm sugar, and salt.
Other ingredients are added too. These are lemongrass, galangal, and daun salam (which is an Indonesian bay leaf). A little coconut milk and turmeric water are also mixed in.
Cooking the Beef
The beef pieces are cooked with all these spices. They cook until the meat soaks up all the flavors. The liquid from the spices also dries up.
Finally, the spiced beef is fried. It's cooked in coconut oil until it turns a darker color. When it's ready, empal gepuk is often sprinkled with bawang goreng (fried shallots). It's usually served with warm steamed rice. This fried beef tastes juicy and has a nice sweetness from the palm sugar. It also has a little bit of spice!
