Starting a Restaurant in Paris
In 1972, Gilbert Le Coze left his home in Brittany, France. He moved to Paris to open his very own restaurant. It was called Les Moines de St. Bernardin. He started this restaurant with his sister, Maguy Le Coze.
Le Bernardin Comes to New York
In 1986, a company invited Gilbert and Maguy to move their restaurant. They moved it to New York City in Manhattan. The restaurant's name was made shorter to just Le Bernardin. Gilbert Le Coze worked with other talented chefs there. One of these chefs was Eric Ripert, who later became the head chef. Under Le Coze's leadership, the restaurant earned two Michelin stars.
