Gogges (Greek: γκόγκες) is a special kind of pasta from Greece. It is also known as "twisted macaroni" (στριπτά μακαρόνια). This pasta is very popular in the Peloponnese region, especially in areas like Argolis and Laconia.
Gogges pasta looks a bit like small seashells. It is usually thicker than some other types of pasta. What makes gogges unique is that it's made with just three simple ingredients: flour, water, and salt. Unlike many other pastas, it does not use eggs.

How are Gogges Made?
Making gogges is a fun process, often done by hand.
Preparing the Dough
First, the dough is rolled out into long, thin cylinders. These cylinders are about as thick as your little finger. Then, these long pieces are cut into smaller sections. Each section is about 3 to 4 centimeters long.
Shaping the Pasta
The next step is to give the pasta its special seashell shape. Each small section is pressed flat. Then, using fingers, it is quickly curled up. This creates the hollow, seashell-like shape. People often roll the dough on a special wooden board. This board has grooves that help give the pasta a nice texture.
Drying the Gogges
If the gogges are not eaten right away, they need to dry. They are usually left to dry for two or three days. People place them between clean linen sheets to help them dry properly.

Traditional Celebrations
Traditionally, gogges were made fresh for a celebration called Tiriní. This means "cheese week" in Greek. It happens during the Carnival (Apókries) season. This week is a time to enjoy cheese, dairy, and oil. It takes place before the long fasting period of Great Lent. During Tiriní, gogges are often served as a small snack or meze. They are usually enjoyed with oil and a type of Greek cheese called mizithra.
Modern Meals
Even today, many families still make gogges by hand at home. But you can also find them in stores. Local pasta factories now make and sell them. You can also enjoy gogges as a main dish in many taverns and restaurants across Greece. They are a delicious part of Greek cooking all year round.
