Grist is a special word for grain that is ready to be ground. Think of it as grain that has been cleaned and prepared. It can also mean grain that has already been ground into a coarse powder at a mill. The word grist comes from an old word meaning "to grind," which makes sense because grinding is exactly what happens to grist!

What is Grist?

Grist is usually made from cereal grains like wheat, corn, oats, or rye. Before grain can be used to make things like flour for bread or cornmeal for tortillas, it needs to be processed. This processing turns the raw grain into grist.

From Grain to Grist

When grains are harvested from the field, they come with outer coverings called chaff. This chaff is not good to eat and needs to be removed.

  • First, the harvested grain is cleaned to remove dirt, stones, and other unwanted bits.
  • Next, the grain is separated from its chaff. This can be done by tossing the grain in the air (a process called winnowing) or by using machines.
  • Once the chaff is gone, the clean grain is ready. This clean, prepared grain is what we call grist. It's now perfect for grinding.
