Gurinderjit Singh is a famous chef from India who now lives in Brisbane, Australia. He owns and cooks at a restaurant called IndiMex Café Bar Restaurant. This restaurant, located at Stones Corner in Greenslopes, is special because it mixes Indian and Mexican food together! People often call him GJ Singh.
Chef GJ's Journey
GJ Singh was born in Siliguri, India, into a traditional Sikh family. His father was an engineer and hoped GJ would follow in his footsteps. But GJ loved cooking from a young age. He always dreamed of becoming a chef.
Learning to Cook
GJ went to the famous Hattori Nutrition College in Japan. There, he learned from Chef Yukio Hattori, who was very well-known. After college, GJ worked in many top restaurants in Japan. He started his career as the Executive Chef at La Mex, a Mexican restaurant in Tokyo.
While in Japan, GJ also taught Mexican cooking. He shared his skills at places like Tsuji Cooking Academy. Before working with Mexican food, he even helped open an Indian restaurant called Ganges in Japan.
Cooking in Australia
Between 1986 and 2001, GJ owned two restaurants on Australia's Gold Coast. These were La Mex at Marina Mirage and La Bamba restaurant at Southport. Both served a mix of Californian and Mexican dishes.
In 1990, GJ came to Perth, Australia. He loved it so much that he decided to live there and open a Mexican restaurant.
GJ's love for Mexican food even took him back to India. In 1995, he helped open a Mexican restaurant there. He also took part in a two-week food festival. He brought 182 different Mexican spices with him for the event!
New Adventures
In 2001, GJ went back to India. He worked as a Vice President for INOX Leisure Limited, a company that runs movie theaters. He said, "I loved the movies and I always wanted to be connected to them!" Later, he became a Director for Future Group. This is a very big retail company in India. He helped open many shopping malls and food businesses.
IndiMex: A New Idea
GJ moved back to Australia in 2011. He opened his first Indian restaurant called IndiYum Fair Dinkum Indian. This was in July 2011. Here, he started trying out a new idea: "funky Indian with a Mexican twist."
On May 8, 2014, Chef GJ opened his latest restaurant, IndiMex Café Bar Restaurant. He believed that mixing Indian and Mexican food would be popular in Brisbane.
The idea for IndiMex came to GJ because he saw many similarities between Indian and Mexican food. Both cultures use lots of spices and enjoy sharing meals. At IndiMex, the restaurant's decorations show a message of world peace. The food combines spices from both cultures, just like the name "IndiMex" suggests. People and food critics really like the new and exciting flavors at IndiMex.
