Hobak-tteok (Hangul: 호박떡) is a special kind of Korean rice cake. It's a delicious, steamed treat made by mixing fresh or dried pumpkin with rice flour. This yummy mixture is then cooked in a traditional Korean steamer called a siru.

Making Hobak-tteok

Making Hobak-tteok involves a few simple steps to create its sweet and soft texture.

Preparing the Pumpkin

First, a special kind of pumpkin is chosen. Often, a Korean "cheese pumpkin" called cheongdung-hobak (청둥호박) is used. The pumpkin is washed, and its seeds are carefully removed. Then, the pumpkin flesh is chopped into very small pieces.

Mixing the Ingredients

The chopped pumpkin is then mixed with rice flour. Sometimes, a little sugar is added to make it sweeter. This mixture is then pushed through a sieve. This makes sure the texture is smooth and even.

Using Dried Pumpkin

Instead of fresh pumpkin, some people use dried pumpkin pieces. These are called hobak-goji. If dried pumpkin is used, the rice flour is sieved first. Then, the dried pumpkin pieces are added to the smooth flour.

Adding Extra Goodies

To make Hobak-tteok even more special, other ingredients can be added. These might include tasty chestnuts, sweet jujubes (a type of fruit), or different kinds of beans like red beans or black beans. These additions give the cake extra flavor and texture.

Steaming the Cake

Finally, the mixture is placed into a siru, which is a traditional Korean steamer. The cake is then steamed until it becomes soft, moist, and perfectly cooked. This steaming process gives Hobak-tteok its unique, chewy texture.
