Making Hobak-tteok involves a few simple steps to create its sweet and soft texture.
Preparing the Pumpkin
First, a special kind of pumpkin is chosen. Often, a Korean "cheese pumpkin" called cheongdung-hobak (청둥호박) is used. The pumpkin is washed, and its seeds are carefully removed. Then, the pumpkin flesh is chopped into very small pieces.
Mixing the Ingredients
The chopped pumpkin is then mixed with rice flour. Sometimes, a little sugar is added to make it sweeter. This mixture is then pushed through a sieve. This makes sure the texture is smooth and even.
Using Dried Pumpkin
