Jusselle was an ancient soup dish. It was made with a broth base and included ingredients like grated bread, eggs, sage, and saffron. All these ingredients were boiled together in the broth to create the soup.
Where Did Jusselle Come From?
Jusselle is thought to have come from a dish called juscellum in Ancient Roman cuisine. This older recipe was found in a famous Roman cookbook known as Apicius. People believe Apicius was written around the late 300s or early 400s AD.
In Latin, the word juscellum (or juscullum) means "a small broth" or "pottage." It's a smaller version of the word jus, which means broth. The name for a similar dish in Sicilian, called sciusceddu, also comes from this old Roman word juscellum.
