Kabāb-e Barg is a delicious grilled meat dish from Iran. Its name, Kabāb-e Barg, means "Leaf Kebab" because the meat is cut into thin, leaf-like strips. This popular kabab is often made with tender beef, lamb, or sometimes chicken.
It's one of the most famous dishes you'll find in Persian restaurants, often served alongside another favorite, Kabab koobideh.
How Kabāb-e Barg is Made
To make Kabāb-e Barg, the meat is first cut into long, thin strips. These strips are then soaked in a special mix called a marinade. This marinade usually includes olive oil, onions, garlic, and a pinch of golden saffron, along with salt and pepper. This soaking helps the meat become very tender and flavorful.
After marinating, the meat strips are carefully placed onto skewers. They are then grilled over heat until they are perfectly cooked. Grilled tomatoes are often served on the side. You might also find it with rice or bread, sometimes sprinkled with a tangy spice called sumac.
Special Meals with Kabāb-e Barg
In Iranian restaurants, there are special names for combinations of kebabs.
- A meal with one Kabāb-e Barg and one Kabab koobideh is called soltānī. This means "in the style of a sultan," showing it's a royal and special meal.
- For an even bigger feast, a meal with one Kabāb-e Barg, one Koobideh, and one Jujeh (chicken kebab) is called şāh äbbāsī. This means "in the style of a shah," referring to a king.
