Have you ever heard of a super yummy Swedish Christmas candy called Knäck? It's also known as Christmas Butterscotch! This sweet treat is a type of toffee that people in Sweden love to make during the Christmas holidays.
The name Knäck means "crack" in Swedish. This is because it's usually a bit hard and crunchy, like a Daim bar! But don't worry, if you like your candy soft and chewy, you can totally make Knäck that way too. It just depends on how long you cook it!
How to Make Knäck: A Sweet Recipe
Making Knäck is a fun activity, even though it takes a little patience! Here's a simple way to make this delicious Swedish candy.
What You Need (Ingredients)
You'll need equal amounts (about 0.3 litres or 1.25 cups) of these main ingredients:
- Heavy cream (the kind you don't whip)
- Sugar
- Golden syrup (or a light Swedish syrup called ljus sirap)
You can also add a few extra things to make it even tastier:
- A few tablespoons of butter
- 1 to 2 teaspoons (5-10 grams) of vanilla sugar
- About 0.1 kg (3.5 ounces) of almonds, peeled and chopped very finely
Cooking Steps
- Get a heavy pot or saucepan. Put all your ingredients into it, except for the almonds.
- Let the mixture simmer gently. Don't stir it while it's heating up!
- You'll notice the mixture will bubble up and then go down a few times. This is normal.
- Keep simmering until the mixture gets thick. To test if it's ready, drop a tiny bit into a glass of cold water. If you can roll it into a chewy or hard ball, it's done!
- This simmering part can take up to 1.5 hours, so be patient.
- Once it's ready, add the chopped almonds. You can also add about 0.75 dl (a little over 1/4 cup) of breadcrumbs and another spoonful of butter if you like.
- Carefully pour the hot mixture into small waxed paper cups.
- Let them cool completely. Once they're cool, your homemade Knäck is ready to enjoy!
