Kohlwurst is a special kind of sausage. It is also known as Lungenwurst or Lungwurst. This sausage is fresh and has a strong smoky flavor. It is made from pork, fat, and a part of the animal called "lights" (which means lungs).

People usually eat Kohlwurst cooked with kale (a type of cabbage). A popular dish is Knieperkohl. You can find Kohlwurst mostly in parts of Northeast and Northwest Germany. It is also popular in Silesia and in southwestern Denmark. In Denmark, it is called "kålpølse," which means "kale sausage."

How is Kohlwurst Made?

To make Kohlwurst, first, pork meat and fat are ground up. Then, a similar amount of raw, clean lungs are also ground. All these ingredients are mixed together.

The sausage makers add different spices. These can include onions, salt, pepper, marjoram, thyme, mustard seeds, and allspice. The exact spices depend on the recipe.

After mixing, the sausage meat is loosely put into natural casings. These are like natural coverings for the sausage. Then, the sausages are smoked for one to two weeks. This smoking process gives them their special flavor.

How to Enjoy Kohlwurst

Kohlwurst is not usually fried or boiled. Instead, it is cooked gently with vegetables. It is often slowly heated with cooked kale dishes. This gentle cooking helps the sausage stay tender and flavorful.
