Place of origin Paraguay
Main ingredients Pintonas (ripe sour oranges), sugar, molasses, water

Kosereva is a special kind of candy from Paraguay. It's known for being "barreled," which means it was traditionally made in large wooden barrels. This unique treat is made from the tough skin of sour oranges, called "apepú" in the Guaraní language.

The orange skins are cooked slowly in black molasses. This process gives Kosereva a mix of sweet, bitter, and tangy flavors. It's also a candy with a good amount of protein.

What's in a Name?

The name "koserevá" comes from the Guaraní language. It's a changed version of the Spanish word "conserva," which means "preserved food." This name makes sense because Kosereva is a way to preserve oranges.

Long ago, when Spanish explorers came to Paraguay, they needed ways to keep fruit from spoiling. They found that cooking these sour oranges in molasses worked well. They often used trimmed barrels for this cooking process.

Making Kosereva

To make traditional Kosereva, you only need a few simple things. The main ingredient is sour oranges, especially those that are ripe but still a bit green, known as "pintonas."

You also need sugar, molasses, and plenty of water. The process involves cooking the orange skins until they become soft and chewy. The molasses gives the candy its dark color and unique taste.
