Lai fun are a type of thick, short Chinese noodles. They are very popular in the Pearl River Delta area of China. You can also find them in Chinese communities in other countries, often called Chinatowns. The name Lai fun comes from the Cantonese language, which is spoken in that region.
Sometimes, Lai fun are called bánh canh in Vietnam. When they are called this, they are usually made from rice flour and a special ingredient called tapioca starch.

How to Tell Lai Fun Apart
Lai fun noodles look a lot like another type of noodle called silver needle noodles. Both are short and thick.
But there is a simple way to tell them apart! Look closely at the ends of each Lai fun noodle. They are usually cut straight. Silver needle noodles, however, often have a pointy or tapered "tail" at their ends.
