What is Lardo?

Famous Types of Lardo

The most well-known lardo comes from a small village in Tuscany, Italy, called Colonnata. People have been making lardo there since the time of Ancient Rome!

Lardo di Colonnata

Colonnata is famous for its marble, just like the nearby city of Carrara. For hundreds of years, lardo in Colonnata has been cured inside special basins made from this local marble. The marble helps keep the lardo cool and gives it a unique taste as it cures for several months.

Lardo di Colonnata is so special that it has a protected status called IGP (Protected Geographical Indication) since 2004. This means that only lardo made in Colonnata using traditional methods can be called "Lardo di Colonnata." It's also listed in the Ark of Taste, which is a catalog of important heritage foods from around the world.

Valle d'Aosta Lard d'Arnad

Another highly valued type of lardo is the Valle d'Aosta Lard d'Arnad. This lardo comes from the Arnad area in the Aosta Valley region of northwest Italy. It also has a special protection called PDO (Protected Designation of Origin). This means its quality and characteristics are mainly due to its specific geographic area and traditional production methods.

Lardo in Stories

Lardo has even appeared in books! In the fantasy novel Faith of the Fallen, author Terry Goodkind describes lardo and how it's made in the Colonnata style. This shows how interesting and unique this traditional food is.
