Lawar (Balinese: ᬮᬯᬃ) is a famous dish from Bali, Indonesia. It's a mix of different vegetables, coconut, and minced meat. All these ingredients are blended with many flavorful herbs and spices. You can find Lawar in many restaurants and small food stalls called warungs across Bali. Even though it has lots of vegetables, Lawar usually isn't a vegetarian dish. This is because it often includes minced meat or sometimes even a special kind of animal blood for extra flavor.

What Goes Into Lawar?

Lawar is made with fresh ingredients like green beans, beaten eggs, and grated coconut. It also uses special Balinese spices and herbs. These include kaffir lime leaves, coconut milk, and palm sugar. Everything is often stir-fried in coconut oil. Fried shallots are added for a crispy touch.

Naming Lawar Dishes

The name of a Lawar dish often tells you what kind of meat is in it. For example, if it has chicken, it's called chicken Lawar. If it has pork, it's pork Lawar. Some Lawar dishes don't use meat but feature young jackfruit instead. This type is known as jackfruit Lawar.

Different Types and Colors

Some kinds of Lawar might include a small amount of animal blood, usually from pork or chicken. This is mixed with spices to give the dish a special taste and a reddish color. Because Lawar is made with fresh ingredients like coconut milk and sometimes blood, it can spoil quickly. It's best to eat it right away, usually within half a day.

Lawar can also be named by its color:

  • Lawar merah (red Lawar) means it contains blood.
  • Lawar putih (white Lawar) means it's made only with coconut and no blood.

There's also a special type called Lawar padamare. This is a mix of several different kinds of Lawar all in one dish. Lawar is usually served with steamed rice. It often comes with other meat dishes, like babi guling, which is roasted suckling pork.
