Potatoes are amazing plants that grow tasty tubers underground! These tubers, which are the part we eat, come in many different shapes, sizes, and colors. You might be used to white or yellow potatoes, but some varieties can be blue, purple, or even red inside!
The cool colors in potatoes come from natural pigments. For example, blue and purple potatoes get their color from special compounds called anthocyanins. Yellow potatoes get their sunny color from carotenoids, which are the same things that make carrots orange!
Many of the potatoes with colorful insides come from the Andes mountains in South America, where potatoes were first grown. Modern farmers usually grow varieties that produce a lot of potatoes, so these colorful types are less common. But some people love to grow them because they are so unique and interesting!
