Makchang is a popular Korean dish. It's a type of grilled meat. The word "makchang" means "last viscus."
This dish can be made from two main ingredients:
- Beef makchang (so-makchang): This uses the abomasum, which is the fourth stomach of a cow. When grilled, it's called makchang-gui or so-makchang-gui.
- Pork makchang (dwaeji-makchang): This uses a part of a pig's digestive system called the rectum. When grilled, it's known as dwaeji-makchang-gui.
People often eat makchang with a special light sauce made from doenjang (a fermented soybean paste) and chopped scallions. It's a favorite snack to enjoy with drinks because it has a lot of calcium and helps the body process alcohol.
Makchang gui is believed to have started in Daegu and the nearby Gyeongsang region of Korea. It's even said that King Seonjo of Joseon enjoyed this dish when he became king.
How Makchang is Made and Served
Makchang is usually cooked on a barbecue grill. But before grilling, it needs special preparation. This helps remove any strong smells and extra fat from the meat.
- Pre-cooking: The meat might be boiled first. This boiling water often has doenjang, onions, or special herbs added for flavor.
- Marinating: Another way to prepare it is by marinating the meat. This means soaking it in a sauce made from different fruits like apples, Korean pears, pineapples, or kiwis. This makes the meat tender and adds flavor.
The dipping sauce for makchang is very important! It's made by mixing doenjang with ground beans, ground red pepper, and chopped scallions. Sometimes, fresh green or red peppers, cucumbers, minari (a type of herb), and garlic are added. You can adjust the sauce to your own taste.
