Olomoucké tvarůžky (say it: oh-loh-MOUTS-keh TWAH-roozh-kee) is a special soft cheese from the Czech Republic. It's also known as olomoucké syrečky (oh-loh-MOUTS-keh SIH-retch-kee). This unique cheese is made in a town called Loštice, which is in the Olomouc Region.
You can easily spot Olomoucké tvarůžky by its strong smell and bright yellowish color. It also has a very distinct, sharp taste. The cheese gets its name from the city of Olomouc, where it was first sold a long time ago.

How This Cheese Is Made
Tvarůžky is made from skimmed cow's milk. This means the milk has had almost all its fat removed. No extra ingredients like rennet (which is often used to make cheese), colorings, or flavorings are added. This cheese is very low in fat, with only about 0.5% fat content.
The Story of Olomoucké Tvarůžky
People have been making this cheese for a very long time! The first time it was mentioned in writing was way back in 1452. The name tvarůžky itself first appeared in 1583.
For many centuries, until the 1800s, Olomoucké tvarůžky was mostly made in small villages around Olomouc. It was seen as a simple food for farmers and villagers. Around the 19th century, people started calling it "Olomouc curd cheese." A company called A. W. Company has been making this cheese since 1876.
In the early 1900s, there were several places in Loštice that produced the cheese. Today, 'Olomoucké tvarůžky' is very special. Since 2010, the European Union has given it a special label called Protected Geographical Indication. This means that only cheese made in the specific Olomouc region, following traditional methods, can be called Olomoucké tvarůžky.
In 2016, a shop in Loštice even started making a unique ice cream flavor based on this cheese!
