What Are Proziaki?

How Are Proziaki Made?

To make Proziaki, people usually mix wheat flour or a mix of wheat and rye flour with other ingredients. These include eggs, sour sour cream (called smietana), water, and a little salt. The most important ingredient is a small amount of sodium bicarbonate (baking soda).

Traditionally, Proziaki were baked on special tile surfaces. These surfaces were heated by firewood. Today, most Proziaki are baked in an oven on a pan. A small amount of fat or lard is used to stop them from sticking.

Proziaki can be round, usually about 6 to 10 centimeters wide. They are about 1.5 centimeters thick. Sometimes, they are made in a square shape instead. If you like sweet treats, you can even make sweet Proziaki by adding sugar to the dough!
