The Pullman loaf is a special kind of bread. It's also known as "sandwich loaf" or "pan bread." This bread is made with white flour and baked in a long, narrow pan with a lid. In France, people call this type of bread pain de mie.
What Makes a Pullman Loaf Special?
This bread is unique because of its shape. Baking it in a lidded pan gives it a perfectly square shape. This square shape means every slice is the same size. It also helps the bread have very little crust on the sides.
Why Is It Called "Pullman"?
The name "Pullman" comes from its use on Pullman railway cars. These were fancy train cars with kitchens. George Pullman owned the company that made these cars. He chose this bread for a smart reason.
How Pullman Loaves Helped on Trains
Even though square baking pans existed before, George Pullman used them for efficiency. Three Pullman loaves could fit into the same space as two regular round-top loaves. This was super helpful in the small kitchens on the trains. It saved a lot of space!
