Romano cheese is a type of hard, salty cheese. It is often used for grating over food. This cheese is popular in the United States and Canada. Its name comes from a similar Italian cheese called Pecorino Romano.

It is important not to confuse Romano cheese made in North America with real Pecorino Romano. Pecorino Romano is an Italian product. It is protected by laws in the European Union. However, in the United States, cheese made only from sheep's milk can also be called "Pecorino Romano."

What is Romano Cheese Made From?

In the U.S., rules from the Food and Drug Administration (FDA) say what Romano cheese can be made of. It can be made from cow's milk, goat's milk, or sheep's milk. Sometimes, a mix of these milks is used.

The cheese must have less than 34% water. It also needs at least 38% milkfat. To get the right fat level, Cream, skim milk, or dry milk can be added or removed. Water can also be adjusted.

How is Romano Cheese Made?

Making Romano cheese involves several steps. First, a special enzyme is added to the milk. This enzyme helps the milk to curdle, forming solid clumps called curds. These curds are then broken into small pieces, about the size of corn kernels.

Next, the curds are stirred and heated to about 120 degrees Fahrenheit (49 degrees Celsius). After heating, the liquid is drained away. The curds are then pressed into special forms. This helps to shape the cheese and remove more liquid.

The cheese is then soaked in salty water, called brine, for a full day. After this, it is rubbed with salt and washed several times. Finally, the cheese is dry-cured. During curing, it is turned and scraped often. Sometimes, vegetable oil is put on the cheese. Romano cheese must be aged for at least five months to be ready.
