Rumex scutatus is a cool plant from the buckwheat family. People often use it as a special herb in cooking. You might know it by its common names like French sorrel, buckler sorrel, or shield-leaf sorrel. Sometimes, it's even called "green-sauce"!
French sorrel is a popular cooking herb. You can find it in fresh salads, yummy soups, and tasty sauces. It's especially good with fish dishes. This plant has a unique tart flavor, a bit like lemon, because it contains something called oxalic acid. But watch out! If you pick it later in the growing season, it might taste a little bitter.
Growing French Sorrel
French sorrel is a very strong plant. It can grow well in most places, even if it gets frosty. It loves sunny spots and can handle short dry periods without much trouble.
How it Grows
This plant grows pretty fast. It forms a big clump that can spread out to about 1 metre (3.3 ft) wide. Its leaves are long, growing up to 10 centimetres (4 in) across. Many chefs and gardeners actually prefer French sorrel for cooking over another type called Rumex acetosa, which is also known as garden sorrel.
