Sütlü Nuriye is a delicious Turkish dessert. Its name means "Nuriye with milk." It is very similar to baklava, a popular sweet treat. However, Sütlü Nuriye uses milk instead of a sugary syrup. This gives it a lighter, whitish look. Many people consider it a special dessert from Diyarbakır, a city in Turkey.
History of Sütlü Nuriye
The story of Sütlü Nuriye goes back a long time. Some say its origins are in Ottoman cuisine. An old recipe from the 1700s was written down by a judge from İzmir. This early version used egg whites in the dough. It also often had a sour ingredient like lemon juice.
The modern Sütlü Nuriye was created in a unique way. This happened during a time of change in Turkey. In 1980, the military took control of the government. This event is called the 1980 Turkish coup d'état.
After the military took over, a military officer bought some baklava. He thought the price was too high. He complained to İsmail Hakki Akansel, who was the Mayor of Istanbul. The mayor then set a "price ceiling" on baklava. This meant there was a maximum price that shops could charge for it. This rule was announced during Ramadan, a special time for many people.
Pastry shops found it hard to make money with the old baklava recipe. The traditional recipe was too expensive under the new price rules. To lower their costs, chefs made some changes. They started using hazelnuts instead of more expensive pistachios. They also added milk to the dessert. Adding milk made each tray of baklava heavier. This helped them sell it for the new, lower price. This new recipe became known as Sütlü Nuriye.
