Song gao (which means "loose cake" in Chinese) is a yummy snack from Shanghai, China. It's a type of dim sum, which are small, tasty dishes often served with tea. This special cake is made from rice flour, sugar, and water.
What makes song gao unique are the azuki beans! These are small, reddish-brown beans. In song gao, you'll find big pink azuki beans on top, usually about 1 inch wide. Smaller azuki beans are mixed inside the cake. There's also a sweet red bean paste filling, which is made from mashed azuki beans.
Song gao is cooked by steaming it as a large, round cake. After it's cooked, it's cut into slices or sections so people can easily eat it.
A Famous Fan of Song Gao
One very famous person who loved song gao was Madame Chiang Kai-shek. She was the wife of Chiang Kai-shek, a very important leader in China's history. Madame Chiang loved this cake so much that she asked the Grand Hotel in Taipei, Taiwan, to add her special version of song gao to their menu. Even today, the Grand Hotel still serves this delicious cake!
