Spiced vinegar is a popular sauce from the Philippines. It's made by mixing vinegar with different spices. The main ingredients are usually vinegar, like the kind made from coconut sap, and chili peppers. Garlic is also a common spice added to it.
A special kind of spiced vinegar became very famous in 2000. It was created by Rene Jose B. Stuart del Rosario from Iligan City. He made it by finely chopping the spices, perhaps using a blender. This popular version is now sold in stores under the name Sukang Pinakurat. The name Pinakurat comes from a word in the Cebuano language that means "to surprise" or "to frighten." Because it was so popular, the Stuart del Rosario family registered the names sukang pinakurat, sukang waykurat, and sukang kuratsoy as trademarks in 2004.
