Tensoba, also known as Tempura Soba, is a yummy Japanese dish. It mixes two popular things: soba noodles and tempura. Imagine delicious noodles with crispy, fried seafood or veggies on top!

What is Tensoba?

Tensoba comes in two main types.

  • One type is served with hot, savory soup. This soup is usually made with dashi (a Japanese broth) and soy sauce.
  • The other type has cool soba noodles. You dip these noodles into a special sauce called tsukejiru. This dipping sauce can be either cold or warm, and it has a strong, tasty flavor.

This dipping style of Tensoba might also be called 'Tenzaru-soba' or 'Ten-seiro'. The name can change depending on where you eat it!

The History of Tensoba

Tensoba first became popular in the middle of the Edo period in Japan. This was a long time ago! One story says that people started eating hot soba soup with kakiage. Kakiage is a type of tempura made from small pieces of vegetables or seafood mixed together and then deep-fried. Back then, tempura made with shrimp was more expensive than other kinds. Because it was special, shrimp tempura soba was sometimes called 'Jo-tempura soba', which means 'upper-class tempura soba', or 'Ebiten-soba'. Just like a Tendon (a rice bowl with tempura), Tensoba can have many different kinds of tempura on top. These can be various vegetables, seafood, or kakiage.

Tensoba Around Japan

Different parts of Japan have their own special ways to enjoy Tensoba. In areas like Kanto and Kyushu, soba shops often use different toppings for their tempura. They might use satsuma age (which is a fried fish cake) or chikuwa (a tube-shaped fish cake). Sometimes, these fish cakes are even dipped in batter and fried, just like other tempura!
