Timoleague Brown Pudding facts for kids

Kids Encyclopedia Facts

Timoleague Brown Pudding is a special kind of brown pudding from Ireland. It even has a unique Irish name: Irish: Putóg Dhonn Tí Molaige. For a while, it had a special "Protected Geographical Indication" (PGI) status. This means it was recognized as a unique food from a specific place, like how Champagne only comes from the Champagne region in France. However, the company that makes it decided in 2012 that this special status wasn't helping their business much, so they stopped using it.

How Timoleague Brown Pudding Is Made

This special pudding is made with care. The main ingredients come from farms very close to the factory in Timoleague. These farms are within about 6 miles (10 km) of the factory. Other ingredients, like grains and onions, come from other places.

Special Ingredients and Preparation

One of the most important steps in making this pudding is how the grains are prepared. The night before, the grains are soaked in fresh pig's blood. This soaking makes the pudding very unique.

The next morning, all the other ingredients are mixed together. These include pork trimmings, fresh onions, and a mix of seasonings and spices. This mixture is then blended with the blood-soaked grains.

Cooking and Cooling

Once everything is mixed, the pudding is put into natural casings. These casings help give the pudding its shape. After being filled, the puddings are boiled in water for about 15 minutes. Once they are cooked, they are taken out of the water and left to cool down.

What It Looks Like and Tastes Like

Timoleague Brown Pudding is brown in color. It is shaped like a long sausage, which often forms into rings. It is made from fresh pig's blood, pork trimmings, grains, fresh onions, and spices. Each pudding usually weighs between 750 and 1000 grams (about 1.7 to 2.2 pounds).

Because it uses fresh blood, the pudding has a very clean and natural taste. Soaking the pig's blood in oatmeal is a traditional way of making pudding in the Cork area of Ireland. This method gives the pudding its special texture and taste that people love.
