Tiyula itum is a special soup or stew from the Philippines. It's made by the Tausug people, who live in the southern Philippines. This dish is famous for its unique black color. It gets its dark look from burnt coconut meat.

What Does the Name Mean?

The name Tiyula itum comes from the Tausug language. It means "black soup." The soup's color can be black, gray, or even greenish. This color comes from using coconut meat that has been burned.

This dish is similar to other Filipino soups like tinola and nilaga. People also call it tiyula Sūg (which means "Sulu soup"). Sometimes, it's called tinolang itim, which is the Tagalog way of saying "black soup."

How Is Tiyula Itum Made?

To make Tiyula itum, chefs start with chunks of beef. Sometimes, they use goat meat instead. The meat is rubbed with a special mix of spices called pamapa. This mix also includes powdered burnt coconut meat.

Next, the meat is fried with ingredients like garlic, onions, turmeric, ginger, and lengkuas. Once the meat turns a light brown, water is added. Other ingredients like black pepper, lemongrass, and shallots are also put in. The soup then simmers until the meat is fully cooked and tender.

Sometimes, coconut milk is added to make the soup thicker and creamier. While some people add tomatoes or siling haba chilies, these are not part of the traditional recipe. Tiyula itum is usually served hot with white rice or special rice cakes called tamu.

Why Is It Important to the Tausug People?

Tiyula itum is very important to the Tausug people. Some even call it "Food for the Royalty" because it's so special. This soup is often made for big celebrations. You might find it at weddings or during Hari Raya festivities, which are important holidays.
