Tonkotsu ramen is a super popular Japanese noodle soup. It comes from the Kyushu island in Japan, especially from a city called Fukuoka. This special ramen gets its name from its rich, creamy soup, which is made from pork bones. In Fukuoka, people often call it Hakata ramen.

What is Tonkotsu Ramen?

Tonkotsu ramen is famous for its unique soup. The word tonkotsu (豚骨/とんこつ) actually means "pork bones" in Japanese. To make the soup, pork bones are boiled in water for a very long time. This can be for many hours, sometimes up to eighteen hours! This long cooking time makes the soup cloudy and gives it a deep, savory flavor.

Main Ingredients

Besides pork bones, other things are often added to the broth. These can include onions, garlic, and ginger. Sometimes, spring onions, pork fat, or even chicken bones are used.

When the soup is ready, cooked ramen noodles are added. Thin slices of roasted or braised pork belly are placed on top. Other tasty toppings can include:

  • Kombu (a type of seaweed)
  • Kikurage (a type of mushroom)
  • Shōyu (soy sauce)
  • Chili bean paste
  • Sesame seeds

The noodles in Tonkotsu ramen are usually served a bit firm in the middle. This is the traditional way to enjoy them.

Some ramen shops let you choose how firm you want your noodles. Here are some common choices:

  • Futsu: This means regular or standard firmness.
  • Harigane: These noodles are very hard.
  • Barikata: This means "al dente," which is firm but cooked.
  • Yawamen: These noodles are soft.

Getting More Noodles

If you finish your noodles but still have soup left, some restaurants offer something called kaedama. This means you can order a second helping of noodles to add to your leftover soup!

Tonkotsu ramen first started in a city called Kurume. Kurume is also in Fukuoka Prefecture, on the island of Kyushu in Japan. It quickly became a special dish in Fukuoka and all over Kyushu.

Hakata Ramen

In Fukuoka, this dish is often called Hakata ramen. Hakata is the old name for the central part of Fukuoka city. So, "Hakata ramen" and "Tonkotsu ramen" often mean the same thing. You can find this ramen in shops all over Japan.

From Fast Food to Famous Dish

When it first started, Tonkotsu ramen was a simple, cheap meal. It was often eaten by workers at fish markets who needed a quick and easy meal. Today, it's known as a dish that takes a lot of time and care to prepare properly. It has become a very popular and respected part of Japanese food!
