There's a saying among Russians and Selkups: "Bread is head for everything." This means bread is very important. It also shows how welcoming a home is. Selkup bread has been made for a very long time, since the 8th or 9th centuries.

This bread is not baked in an oven like most breads. The first steps are the same: flour is mixed with water and salt. But instead of yeast, baking soda is used to make the dough rise. Then, the dough is baked in very hot sand over a fire.

Smoked Fish: A Popular Treat

Yamal cuisine has four main ways to prepare fish: raw, boiled, baked, and smoked. Today, Smoked fish is very popular. Hot smoked fish is made in towns and villages. It's not a very old traditional dish, but it's well-loved.

When camping, people make hot smoked fish using an aluminum pot. They put smoldering sawdust in the bottom. A wire rack goes on top, and the fish sits on the rack. Only a little heat is needed. The fish gets a golden color when it's ready.

Stroganina: Thin Slices of Frozen Fish

Stroganina has always been a source of pride in Yamal. It's a special and simple food. It's made from frozen white salmon. First, strips of skin are cut from the fish, from tail to head. Then, small cuts are made into the fish's flesh. The fish is placed head-down on a hard surface, and its skin is removed. Finally, the fish is shaved into very thin slices or layers. The way it's sliced depends on whether the fish is male or female.
