Alvin Cailan (born 1983) is an American chef, author, and television host. He is known for creating delicious food. Alvin hosts a show called The Burger Show on First We Feast. You can watch it on YouTube and Hulu.
Alvin Cailan started a food truck called Eggslut. It was famous for its amazing egg sandwiches. The food truck became very popular. People would sometimes wait two hours to try the food! Now, Eggslut has many restaurants. Some are in Los Angeles, like at Grand Central Market. Others are in places like Venice, Glendale, and Las Vegas. In 2021, Alvin Cailan became the head chef at Umami Burger.
Early Life and Education
Alvin Cailan grew up in Pico Rivera, California. His family was Filipino. To keep him busy, his parents found him a job. He washed dishes at a retreat house. This kitchen made food for 150 people every day. By the time he was a senior in high school, Alvin was cooking. He was even the kitchen manager!
Alvin first studied business at California State University, Fullerton. He worked for a construction company for a while. After that, he decided to follow his passion for cooking. He moved to Oregon and went to the Oregon Culinary Institute. This is where he learned many cooking skills.
Alvin Cailan's Career
After culinary school, Alvin Cailan worked at several famous restaurants. He cooked at Olympia Provisions in Portland, Oregon. Then he worked at Bouchon and The French Laundry. These are both very well-known restaurants in Yountville, California.
In 2011, Alvin Cailan started his own business. He launched Eggslut with his cousin. It began as a food truck in Los Angeles. Eggslut quickly became a huge hit. In 2013, they opened their first regular restaurant. It was inside Los Angeles's Grand Central Market.
Eggslut became famous worldwide. MSNBC even said it was the most Instagrammed restaurant. Bon Appétit magazine named it one of the Top 50 best restaurants in the United States. By 2025, Eggslut had grown a lot. It has stores in many countries. These include Tokyo, London, Kuwait, Korea, and Singapore.
Alvin Cailan also wrote a cookbook. It is called Amboy: Recipes from the Filipino-American Dream. The book was published in August 2020. It shares recipes and stories about Filipino-American food.
In 2021, Alvin Cailan took on a new role. He became the head chef of Umami Burger. This shows his continued success in the food world.
