What is the History of Baodu?

Baodu has a long history. People first wrote about it during the Qing dynasty, a very old time in China. Today, you can find many restaurants and street vendors selling Baodu in Beijing. One famous place is Baodu Feng, a traditional restaurant that opened way back in 1881.

What is Baodu Made Of?

When you order Baodu, you can choose different parts of lamb or beef tripe. Each part has a slightly different texture and taste.

Different Cuts of Tripe

  • Beef Tripe: Beef tripe is usually divided into four main parts.

* Mao Du: This is the black part of the first stomach (rumen). * Bai Ye: This is the white part of the second stomach (omasum). * Du Ren * Hou Tou

  • Lamb Tripe: Lamb tripe is softer than beef tripe. Because of this, more parts of the lamb's stomach can be used. There are eight main parts.

How is Baodu Cooked?

Baodu is cooked very simply, but it takes great skill! Fresh tripe is cut into thin slices. Then, it's quickly dipped into boiling water for just a few seconds. This quick cooking is called "blanching." A good cook knows exactly how long to blanch the tripe. If it's cooked too long, it becomes tough and chewy. The goal is to make it tender and delicious.

What Sauces Go with Baodu?

The special sauces are a big part of what makes Baodu so tasty. The main sauce mix includes:

  • Jiang doufu: This is a type of fermented bean curd.
  • Sesame paste: A thick paste made from sesame seeds.
  • Savory paste: This paste is made from the flowers of Chinese chives.

You can also add other ingredients to your sauce, like soy sauce, vinegar, fresh coriander, or chopped green onions. You can mix and match to find your favorite flavor!
