How is Bleu de Gex Made?

Making Bleu de Gex is a careful process.

  • First, a special mold called Penicillium roqueforti is added to the milk. This is what gives blue cheese its distinctive color and flavor.

  • After that, the cheese is aged for at least three weeks. This aging process helps the cheese develop its creamy texture and mild taste.
  • To be officially called Bleu de Gex, the cheese must be made only from the milk of Montbéliard cows. These cows are a specific breed known for their milk quality.
  • Each wheel of cheese is stamped with the word "Gex" to show it's the real deal.

Selling Bleu de Gex

In some countries, like the United States, there are rules about selling certain types of cheese. Since 2004, Bleu de Gex cannot be sold in the United States. This is because the rules there require soft cheeses from France to be made with pasteurized milk. Bleu de Gex is made with unpasteurized milk, which means it doesn't meet these specific import requirements.
