Bokkeum-bap (Hangul: 볶음밥), also known as fried rice, is a yummy Korean dish. It's made by stir-frying bap (which means cooked rice) with other tasty ingredients in a bit of oil.

Often, the name of the main ingredient is added to the front of "bokkeum-bap." For example, kimchi-bokkeum-bap means fried rice with kimchi!

Different Kinds of Bokkeum-bap

As a Meal or Side Dish

In Korea, bokkeum-bap is a popular dish that can be eaten on its own or as a fun addition to a meal.

Sometimes, after people finish eating main dishes cooked on a tabletop stove, they ask for bokkeum-bap. They might say "bap bokka juseyo" (밥 볶아 주세요.) which means "Please fry rice." Then, cooked rice, along with gimgaru (seaweed flakes) and sesame oil, is added right into the leftover sauce from the main dish. It's all stir-fried and sometimes even scorched a little to make it crispy!

By Main Ingredients

The name of bokkeum-bap often tells you what's inside! The main ingredient, besides the rice, usually comes first in the name.

  • Kimchi-bokkeum-bap is fried rice with kimchi.
  • Beoseot-bokkeum-bap means mushroom fried rice.
  • Saeu-bokkeum-bap is shrimp fried rice.

If there isn't one special main ingredient, it's usually just called bokkeum-bap (fried rice) or yachae-bokkeum-bap (vegetable fried rice).

Different Cooking Styles

Korean Chinese Fried Rice

There's a special kind of bokkeum-bap called Korean Chinese fried rice. People in South Korea often call it junggukjip bokkeum-bap (중국집 볶음밥), which means "Chinese restaurant fried rice."

This type of fried rice has a unique smoky taste. This comes from cooking it in a wok over very high heat. It often includes scrambled or fried eggs cooked in oil flavored with scallions. It's usually served with a thick black sauce called jajang sauce, which is also used in jajangmyeon noodles.

Iron Griddle Fried Rice

Another popular type is cheolpan-bokkeum-bap (철판 볶음밥), which means "iron griddle fried rice." This style is inspired by Japanese teppanyaki.

The Japanese word teppan (鉄板) and the Korean word cheolpan (철판) both mean "iron griddle." They even share the same Chinese characters! This shows how cultures can influence each other's food.
